Cookies...

So I always struggled with what to do with my over ripe bananas... I mean banana bread is delicious but I like options... So I'm open to new ideas, but this is one of my favorites!

Banana Chocolate Chip Cookies (Softies)
1 1/4 cup flour
1 tsp baking powder
1/2 tsp salt
1/3 cup butter, softened
1/4 cup light brown sugar
1 ripe banana
1 egg
1 tsp vanilla extract
3/4 cup milk chocolate chips
walnuts optional but I think make them delicious!


Preheat oven to 350. Spray cookie sheets or use parchment paper. Sift together the flour, baking powder and salt on to a piece of wax paper (to make it easier to add it to the wet ingredients when its time)

In a stand mixer (or with a hand mixer), cream together the butter and brown sugar. Beat in the banana and egg, then stir in the vanilla. Gradually stir in the dry ingredients until well blended. Fold in the chocolate chips and walnuts. Drop by rounded spoonfuls onto the prepared cookie sheets.
Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
